Short slots, done properly
Set your time interval to fifteen minutes and the booking page offers 09:00, 09:15, 09:30 and so on. A skin fade that genuinely takes forty-five minutes blocks three of them. What you never get is a diary that only thinks in half-hours and quietly loses you two cuts a day.
Walk-ins and appointments together
Plenty of shops run both, and that is fine. Bookings made online, bookings you take over the counter and walk-ins you add as they sit down all land in the same diary and all block the chair. Whoever is on the floor can see the whole day on a phone.

Each barber gets their own column, their own hours and their own services. If one of you does beard work and hot towels and the other does not, only the right name comes up when someone books it.

The customer who comes in every three weeks is the whole business. Their record holds what they had last time and when — useful when they sit down and say "same as before" and you were not the one who did it.

Depends what you want. If you are turning people away at peak and quiet at 2pm on a Tuesday, letting regulars book ahead evens that out. If you are happy as you are, honestly, you may not need it.
