A workshop has a fixed number of wheels, stations or easels, materials bought in advance, and a date that does not move. Every empty place is money already spent. Selling those places properly, and being paid for them up front, is most of the job.

One-off dates and weekly classes
A Saturday pottery taster, a wreath-making evening in December, a weekly life-drawing class. Each is set up with its dates and times, how many places it has and who is running it. Weekly classes can have a last date; one-off workshops are single dates you add as you plan them.
Places that match the room
Set the places to the wheels, the cookery stations or the seats at the table, and the workshop stops at that number. Couples and friends book two places together, and you can cap how many one person can take.
Paid when it is booked
Materials are bought before anybody arrives, so take the full price or a deposit when the place is booked — into your own Stripe account, with no commission taken.
Gift bookings and group bookings
Somebody booking for a friend books the place in their own name and adds the guest's name in the notes. A hen party taking six places is one booking.
Who is coming, and what they need
Open a workshop to see everyone booked, how many places each and who has paid. Ask about allergies or experience when they book, and the answers are there before the day.
When a workshop does not run
Too few booked, a tutor ill, a kiln broken. Cancel the date and everybody booked is told. Refunds are made from each booking, and guests can move themselves to another date of the same workshop if there is room.
Honest limits
There are no gift vouchers, minimum numbers or waiting lists yet. A course of several weeks is booked date by date rather than in one go.

Yes. They choose how many places when they book, up to a limit you set, and pay per place.
Yes, a fixed amount or a percentage, per workshop. It goes to your own Stripe account.
Not yet. A place can be booked by one person for somebody else, with the guest's name in the notes.
There is no automatic minimum. Cancel the date and everybody booked is told, and refund them from their bookings.
With the shop extra, yes — sell kits, gift sets or finished pieces from the same booking page.
